Antioxidant Smoothie Bowl

I’m crazy obsessed with different combinations, and I feel lost if I continually eat the same thing. Unfortunately lately with a busy schedule, meals have been repeated and I HATE THAT! I love trying new things and so when I had time one morning, I threw a good ol’ smoothie together that is simple, and packed full of good for you nutrients!

I started with an organic antioxidant blend of berries+cherries I purchased while food shopping the other day, and went ham from there. I added almond milk, raw oats, handfuls of greens, a half of a banana, protein and ice.

I was full for hours! As a busy bee, having meals that fill you up helps an incredible amount, and I hope this smoothie does the same for you!

Antioxidant Smoothie Bowl

serves: 1

Ingredients:

1 C. Antioxidant blend (I used 365 brand)                    Handful of ice

1/2 frozen banana                                                             1 scoop vegan protein (I used Sunwarrior)

1/2 C. Almond milk, unsweetened (Califia Farms)

Two handfuls organic spinach

1/4 C. raw oats


Instructions:

  1. Add ingredients as ordered above into your blender or nutribullet, and blend, blend, blend!
  2. Top with anything you desire. I enjoy homemade granola, almond butter, fresh fruit, superfoods, etc…

Chia Oat Pancakes

I love pancakes to an extremity that I’m sure most people don’t understand. When I was younger, I was obsessed with fluffy, buttery pancakes drowned in mass amounts of Aunt Jemima syrup. And then as I got a little older, strawberry crepes were a go to whenever we went out.

I think it all stemmed from my Saturday mornings with my dad in the kitchen. When I was little, we’d sit in the kitchen and whip up a box recipe and go crazy. I always looked forward to that, and that’s when I slightly fell in love.

Now that I realize the difference between a homemade and boxed pancake that was loaded with nastys, I’ve become even more involved with this lovely little breakfast. I’ve swapped out my weird maple syrups for all natural, pure. No cups of sugar or white flours to be seen. Just a good ol’ flapjack, made from the best of the best.

I love making oat flour so I decided to throw that in there with a little bit of coconut flour to make the batter. It’s super simple, and these are ingredients I almost always am relying on, so how could I turn away from them for one of my favorites?

From there on, I threw in chia seeds for some extra energy and to help bring a little difference to the traditional batter. I haven’t used whit chia yet, so I went for the dark seed, which is what I have at home…

These took a slight bit longer to cook, but they were chewy, pretty fluffy and DELISH!

serves: 1, makes 6 pancakes

 

 

Ingredients:
1/2 C. rolled oats, ground

2 TBSP. coconut flour                               1/4-1/3C. water  & 1/4C. nutmilk

1 tsp. baking powder                                 1 tsp. cinnamon

1 tsp. maple extract                                    1/2 TBSP. chia seed

1 egg white                                                     1 TBSP. coconut oil, melted


  1. Melt coconut oil onto a frying pan
  2. Add in ingredients starting with the flours, adding them in order and stirring until mixed.
  3. Let the mixture sit for a few minutes and have the pan heat up.
  4. Start spooning the batter onto the pan and let the pancake cook until browned.
  5. Once all the batter is used, top with what you like! I used almond butter, granola and fruit!
  6. Enjoy!

Ooey Gooey Banana Bread

Ripe bananas. Like really ripe bananas.

That’s what I came home to when returning from Spring Break, and I knew exactly what I was gonna make.

BANANA BREAD.

Sure, sure I could have just frozen them like most bananas and downed them as dessert or a smoothie, but I felt a banana bread inkling growing in my taste buds, so I sat down, found a base and went crazy.

Best part? No sugar. No gluten. Vegan. No oil.

Basically a stripped recipe to make this one heck of a natural bread that will satisfy your cravings for something sweet, while being King of the healthy world. Just kidding, maybe not King. Close enough though.

I started first thinking I wanted to try a vegan bread. The last time I tried, nooooot super successful. So this time, I was determined to make it work. And then, as I began going, my head starting spinning with exchanges and I got the most moist, delicious banana bread I’ve ever made. Even Grandma Lois loved it…. that’s how you know we’ve made it!


 

Ooooooeeey Gooeeyyy Banana Bread

Makes: one loaf              

Prep time: 15 min, cook time: 55-60 min   

 

V,GF, and Oil free


 

Ingredients:

1 3/4 Rolled Oats (ground for flour)                               1/4 nut milk (I used Califia Farms)

2 overly ripe bananas                                                         Dash of cinnamon and sea salt

1 tsp. vanilla and maple extracts                                    1/3 unsweetened applesauce

1 tsp. baking soda                                                                 1/2 C. pure maple syrup

1 1/2 Flax Seed (milled)

 

Instructions:

  1. Preheat your oven to 325 degrees F.
  2. Start by creating your flax egg. This should be the milled flax seed with 3 TBSP warm water. Let sit until a sticky consistency.
  3. In a large bowl, combine the maple syrup and apple sauce until the mixture is one. Add in your ripe bananas by smashing and stirring them. Clumps of banana are okay!
  4. Next, mix in the extracts, salt, cinnamon, nut milk and baking soda. Combining all ingredient together.
  5. At this point, add in your flax egg and give it one more stir.
  6. By spoonfuls, slowly mix in the oat flour you created until the entire mixture is “just mixed”.
  7. Add the mixture, top with a sprinkle of raw oats to a greased bread pan and bake for 55-60 min.
  8. Let cool for 5-10 minutes, and then enjoy!

This can be kept out for 2-3 days, or refrigerated for up to a week!

Basil Citrus Spinach Salad

When in Florida, ya gotta have some orangish lovin’, am I right?

Not only that, but let’s talk about how freakin’ awesome vitamin C is.

I’m a huge fan of salads, and fruit, and vegetables, if you can’t tell. But I’m also a fan of a little spicy flavors, and a BIGGGG fan of creating incredible combos that please all my lovely little taste buds. When I came back from the beach this afternoon, I knew that I needed to honor them.

I started with some of my favorite greens: spinach. I love spinach and all the nutrients it packs into the small dark greens you can throw onto anything. I’m talking calcium, iron, vitamins up the ying yang. I love it. So anyways, I started with that, chopped, tossed in crushed red pepper+basil and roasted some mushrooms, red peppers, and cherub tomatoes. As I did this, I began with the “dressing” of sorts.

Using citrus juice and a little lemon, I combined it with a touch olive oil and basil to bring out the flavors of the orange. Basil and citrus is probably my most favorite thing on this entire planet now so…

Then, after that was prepared, I threw together the rest of the mix. Cubed avocado, a little black pepper, a fried egg…. and then, a healthy sprinkle of this amazing turkey jerky I bought while at Whole Foods… Krave . I’d read about it in Women’s Health, and felt it was a necessary try. I also noshed on some Late July Sweet Potato tortilla chips.

I’m glad I did.


 

Basil Spinach Citrus Salad

Serves: 1

Ingredients:

2 handfuls organic spinach                                        1 organic egg

2/3 button mushrooms                                                1/3 fresh orange

1 slice lemon                                                                   2 tsp. basil (add more if necessary)

1/4 red pepper                                                                1/2 TBSP. olive oil

1/4 avocado, cubed                                                        5/6 cherub tomatoes

Krave Basil Citrus jerky


  1. Prepare the vegetables (mushrooms, red pepper, cherubs..) by tossing in a mix of crushed red pepper, a hint of basil, a touch of sea salt and black pepper. Roast at 445 degrees for ten minutes.
  2. Take two handfuls of spinach and add this to a bowl. Drizzle with the olive oil, orange+lemon slice squeezes and basil. Leave mixture in bowl.
  3. As you wait for the veggies, fry up your egg.
  4. Once the vegetables are ready and cooled for a minute, add them to the spinach and toss them with to make the salad mixture. Plate this.
  5. After you’ve got that all plated, sprinkle some turkey jerky over the mixture and plop your fried egg onto the salad.
  6. Serve with tortilla chips or on it’s own!IMG_4073.JPG

What I’m Lovin’ Lately

I realized that I haven’t done one of these posts recently, yet I’m constantly finding things that I’m falling in love with so why not share out to the word?

Lately, life has been really crazy busy. It’s hard to find a moment for yourself when the whole world is spinning and going around. Time is flying, it’s already spring and high school is graduation is coming too quickly for me to process!

But that doesn’t mean I don’t have time to fall in love with a few things with a busy schedule.

  1. Kevita Kombucha Brews– I am a for sure kombucha girl and these just seal the deal because of the rocking flavors they come in. Lavendar Melon (<3) is my forever and they give me the little bubble I look for, as I don’t drink pop! Probiotics and a killer taste? Sign me up!

2.  Hummusapien Lemon Coconut No Bake Bitesimg_2635

These have become my favorite snack bites EVER. Super easy to nosh on whenever I’m on the go, and the flavor combo definitely resonates with my taste buds. I love how easy they are to make, with such minimal ingredients. I’ve been throwing them on my yogurt, smoothie bowls, and even a few times with oatmeal. Ah, I am just in love.

3. 6oo Booty Rep from RRayymee- I am seriously working to get a booty. Yes, that sounds creepy but as a runner and as a regular human being, I want to definitely gain muscle in my glutes (LOLL). I love her blog, but this workout is one of the highlights I grasped from it while skimming. Easy to understand, yet it burns in that weirdly awesome kick-ass workout way!

4. My Saucony Ride 8 running shoes-

  So I ran in the Ride 7s for a lonnnnnnnng time (way too long) and they honestly were my favorite things. I mean, they were my first real pair of running shoes, but that doesn’t mean that’s the only reason I loved them so! When I got fitted for new shoes, I felt almost lost without trying on the new Sauconys. Finally at the end, I did and they ended up being perfect once again! The comfort and cushion of the shoe is just what my foot needs. Happy runner over here!

5. Alabama Shakes- If you are totally into a different feel of music, I highly reccommend this band. They just won most up and coming artists and they TOTALLY DESERVED IT! I cannot say enough about them.

6. Perfect Bars

I just did a review and giveaway on these bars, but I’ll say it again: LOVE them. The ingredients are all organic, totally pronounceable, and the flavors are outrageously good. The thing I love most about them is that they keep you full on such awesome nutrients that you can snack on one and not be starving after twenty minutes. Now that’s a good snack option!

7. The change in season- I am not a winter person by any means (unless it’s Christmas… then snow is okay for about 3.5 days) and with spring rolling around, the fashion is back, the sun is out and I am a happy camper. I’m an outdoors type person, but I can’t take cold so I have to hide away under three sweaters. It’s so nice to walk out of my house in a light coat and rolled up jeans instead of my winter jacket! THANK YOU CHICAGO.

What I Ate Wednesday (3.16.15)

Wow, a week goes by super fast!

And not only is that really, really exciting; but next week is only three and a half days and then…… SPRING BREAK! I am oh- so ready for a break from class! My family takes a trip to a little Florida island every year, therefore I’m goin’ away and hoping to enjoy some sunshine, incredible eats (which of course you will be fully informed of!), and spending time with my fam bam.

But that’ s the next coming weeks. Now let’s talk about what’s goin’ on now!

Lately the oatmeal cravings have been hard to control. Not sure what the kick is fueled by, but let’s get real, I’m not complaining!

This morning (once again) I honored that craving with some cinnamon chia oats made with a little splash of almond milk

The lighting in my kitchen early morning is terrible. In fact, most of the lighting in my house is a disaster. So the toppings look semi disgusting, therefore I don’t blame you if you cringe at the dollop of Siggis and almond butters.

A while later, I munched a lemon coconut no bake bite from my meal prep! These babies are to die for

It was the perfect treat before my school day which started late due to a migraine (and senoritis….). Then, I was off to school for a day of boredom.


Lunch was nothing special, but it rocked my taste buds. I had a massive salad with roasted sweet potatoes, chickpeas, organic turkey, beets, organic greens and cherry tomatoes tossed in apple cider vinegar. I also had some carrots and oasis hummus on the side.

By the end of the day, I had the snack I had packed which consisted of raw almonds and a killer orange. I’m really into citrus lately… probably because they help with muscle soreness… lollll.

My migraine was in full swing again, so I ended up leaving and missing track which to be honest, I was mega bummed. I love practicing, even if I’m still transitioning from my injury, it makes me feel a part of my team!

I drank a few glasses of ice cold water to help cool my mind and then after it subsided, I decided to go for a run (YIPPEE!). Got three miles in at 7:19 pace. Man, does that feel good to say.

Of course, being a busy bee, I had an appointment tonight so right after my run and ab session, I jumped in the car and had no time for dinner. Post run nutrition was this Svelte drink I picked up at the store. I am nooooot a soy fan, but I did see these on Instagram, and in a quick moment, it was fast protein to heal my muscles!

 

 After I got back from my appointment, dinner consisted of baked turkey, sauteed veggies in extra virgin olive oil, and white quinoa. Such a good dinner! And now time for relaxation, and The Other Woman (LOVE CAMERON DIAZ!)

What I Ate Wednesday (3.8.16)

Suppppp bean sprouts.

I know I said that I was trying to post more this week but let’s be honest… I knew I wouldn’t be able to. I just got back from my school’s Snowball event (which….AHHHHMAZING!) and I was wiped from directing, so posting was on the back burner, unfortunately.

Snowball taught me a lot about the balance I’ve been trying to practice in my life, and so I’m sure I’ll have a few words on that. But for now, a WIAW! I’ve definitely added more to my meals lately, as I am working on putting on a little weight before I get totally back onto the track team. Although I’m trying to gain some weight, I’m doing it in a healthy, balanced way, following what I choose to do. A lot of people see weight gain as an opportunity to eat ice cream five times a day, along with fast food. In my eyes, I just feel like that is an unhealthy option. I’d rather practice a normal eating style, of course treatig myself when I want! Therefore, healthy fats, more protein and natural sources of nutrition are the route I’m going, with my balanced mindset.

Breakfast this morning was an absolute favvvvve smoothie bowl: a combination of frozen blueberries, half a frozen banana, unsweetened almond milk, half Sunwarrior vanilla vegan protein scoop, and a handful of spinach. I threw in a couple ice cubes to make a bit more. Then, I topped like crazy. My favorite (FAVOOOOORITE!) homemade granola , Siggi’s plain skyr, hemp hearts, goji berries and my lovely and dearest mini almond butter Perfect bar.

I also had coffee on the side because what’s a breakfast without some caffeine?

It’s also like 60 degrees in the burbs of Chitown, therefore a smoothie was necessary because it’s GOOOORRRGEOUS outside and I am just so happy to be alive and able to walk out of my house in a t shirt!

Mid morning hunger cues were cured by a homemade banana muffin during Anthropology. Snacking is important, especially when in your second semester of Senior year. I need something to actually focus on..

Lunch today was definitely nothing special due to the fact that I threw it together in about ten minutes this morning before I left for school. We can’t all be perfect meal preppers, can we? My back up lunch was arugula and spinach tossed with EVOO+apple cider vinegar, with cherubs, mushrooms, edamame, and chicken breast. I had some carrots, cantelope+a cutie ((vitamin C- I’m sick as heckles)), and raw almonds. Kept me full and nourished through a nasty anatomy class where we dissected a cow eye.

Joyous, huh?

  By the time I got home from school, I was hungry again so I made an awesome snack pick of a vanilla Siggi’s topped with a no bake lemon coconut protein bite from Hummusapien (try them, they are delicious), a little granola and blackberries. Then I was off to work for an hour, and physical therapy!


After PT and the obscene amount of squats I endured (and running in my new shoes!), I was starving for dinner. My mom had some tacos prepped, so organic turkey meat, black beans and tomatoes and lettuce. Yes, they are a mess. And yes, I had a third.

 Today I really was feeling a treat and my dad wanted to hand out, so we grabbed Froyo ((my flavors: vanilla, pineapple sorbet and a little peanutbutter gelato)). The great thing about this is that I don’t see eating dessert as a “cheat”. It’s just something I do every so often when I’m in the mood. So heck yeah, I enjoyed this. And I don’t need a specific day to go out and get myself something I want. And you know what? I had a spoonful (or two) or almond butter when I got home cause I just felt it.

All in all, a killer eats day if you ask me.

My Day in the City

Ah, Chicago.

I’m such a city girl, it’s slightly sickening. Every family vacation we’ve taken to a city goes up on my favorites list no matter what, just because I love the city so much.

It gives me this weird, happy feeling all over that makes me want to jump out and scream for taxis, spend money on almond milk lattes, and dance to the beat of street drummers.

I’m a bit of a fan.

Yesterday, I had the amazing opportunity to spend the night in the city with my high school singing group. We were performing at the Palmer House, one of the most gorgeous places I’d ever seen.


Just the lobby alone had me flabbergasted. I mean, look at that ceiling! And all the people in there looked so professional, so fancy, yet, so laid back. As I walked around with my jaw dropped, I felt my heart race saying “YOU NEED TO LIVE IN THE CITY!”. I had already planned on venturing out there after college, but this truly sealed the deal.

After we did our sound check Wednesday night, we ventured over to Miller’s Pub to grab dinner. Although the dinner was nice, and the salmon was good, I would have loved to explored downtown more, and eaten at a much cooler restaurant… but as a foodie knows, we aren’t too often in the presence of other foodies.

The next day was our performance, and as we walked to the Palmer House, I spotted The Goddess and the Baker. I then proceeded to freaking cry because I have been DYING to go there! If you are unfamiliar, it’s one of the food hot spots in the loop. Of course, you know I was screaming and made it my goal to make it there that afternoon.

After we performed (which was such an amazing experience) , my director let us take off.

I was torn between two places: Brightwok and Goddess and the Baker. But finally made up my mind to travel on over to Brightwok , a crazy good asian, stirfry organic combustion of amazingness. My dad and I started our walk down the loop and I practically skipped around the corner as I neared one of the places I had been swooning over for so long.

When we got there, the cutest message greeted us outside on a chalkboard. It was an immediate attraction for me, and I couldn’t wait to get inside!

As I went up to the counter, I saw all the fresh ingredients lined up and ready to be mixed into whatever you chose. After contemplating just about every option, I decided to go with their “Live Brightly” bowl- mixed greens with stir fried broccoli, carrots, peppers, edamame, cabbage and farm fresh chicken topped with a golden miso dressing.

I could not wait to get my number called. The smell and sounds of the fresh food were causing me to drool, and to tide the wait, I posed with their wall of Chopsticks.img_1522

Finally, #27 was called and I got my bowl. Wow. The flavors and freshness of the mixture was killer! The veggies were cooked perfectly, the chicken was tender and flavorful, while dressing added this awesome ginger kick that I could eat ten times over. Pure heaven in a small stir fry bowl, if you ask me.

I had left over dressing, so you better believe the rest came home with me… hoping to remake this beauty soon!

After I finished, I realized that we still had a half hour before we had to be back to head home so I made the executive decision, and dragged my dad over to Goddess, as well. I had an opportunity, and you bet I took it!

The way over to Goddess was filled with sunshine, and good city vibes that made me happy to be alive. As cheesy as that sounds, sometimes you just need a little perk in your day to add to the excitement of life, and get you through. The good weather, and the joy of exploring was just what I needed.

Not to mention when I walked in and saw the entire glass case full of fresh made pastry and the lists of food as well as house made drinks that double my picture. That made me pretty happy, too.

 

I knew I had to get the almond milk latte, but I also had to grab something to eat from here as well. I ended up with a superfood BOOST! ball, and grabbed a little homemade ‘nola bar to munch on another time. When in foodie heaven, am I right?

The latte was awesome- creamy, foamy, and out of my usual black coffee. It made me actually enjoy lattes, and the energy ball just added to the awesomeness. Seriously, cannot wait to come back and grab about fifty other things.

On the way home, I found myself totally cheesing over how awesome my day was, and it got me so excited for the future. I cannot wait to be able to explore, and hopefully spend my days in the city after school. Chicago, I love ya!

What I Ate Wednesday: Day Breakdown

Looks like a week has gone by once again, and here we are for another….

WHAT. I. ATE. WEDNESDAY!

I’ve been reading posts all over trying to find a balance for my WIAWs and this time around, I’m not going to talk SOOO much about the food… I mean, I think you can tell what I eat from the picture..?

I’m going to give a run down of the day, which of course takes place in lovely, little high school classes. But, I think it’ll bring a little zest considering it’s slightly fun to read a person’s daily!

Onto the post

I get up at like 6 am everyday, except for days I hit the gym before school…(which is like 4:30 and that’s a killer!) So today, same old same old roll out of bed, drink a huge glass of water, and start to get ready for my day!

Easy morning time saver: Make a lunch the night before. I practice this basically all the time so that I make sure I get what I want and what I need for the upcoming day. It also saves time for me to brew up a nice cup of black coffee, relax, and then start my breakfast

Breakfast this morning was super yum: 1 C. mixed berries, half scoop protein powder, handfuls of spinach and a couple chunks of banana. Then blended together and topped for deliciousness.

After slurpin’ this bad boy down, I head to school to suffer. I’m sorry, did I say that?

When at school, I go through the motions and am like always hangry. How sad is that?It’s really nice though, because my second period teacher keeps healthy snacks for us (trailmix, nuts, etc…). SO if I forget a snack or am hungry, she’s got my back.

Second period I did munch on one of my Banana bread muffins to tied me over until lunch which isn’t for two more periods… terrible.

Lunch was awesome today! Red quinoa, zucchini noodles, chickpeas, avocado and roasted tofu with some veggies and hummus because WHO THE HECK DOESN’T WANT VEGGIES AND HUMMUS?!

Sorry… anywho a few periods later in Anatomy, I had to look at a sheep brain and write the functions of each part. Thank god this lunch stayed down!

Snack cue came in during 8th right before practice, so I munched on some Siggis, and a really good orange. Oranges are so good. Especially dipped in this bad boy.

Then I shuffled down to the weight room at school to do a bike workout because I’m still restricted from running. Very annoying. But, at least I got some homework done!

I also did twenty five minutes of abs, then stretched and called it a day. Really good workout, like an hour straight of hard levels on the bike. My legs are still getting back into it, so slightly sore over here!

By the time I was ready to go, it was 6. You can image how freaking hungry I was! My mom picked me up (cute Senior over here who does not have a car!) and I almost cried when she said she had dinner ready. Baked organic chicken breast, roasted brussels, avocado and roasted potatoes. I literally had this plate X2.

After dinner, cleaned up and all that jazz, I flew upstairs to relax, write this blog post and…img_1444

Have some dessert of fresh berries and dark chocolate with a cup of tea. Life is good, fellas.

Weekly Wednesday Eats

Coming back at you live….. WHAT I ATE WEDNESDAY!

It’s been a crazy one over in the life of this little sweet ‘tato, with getting back to track practice, PT after school, and livin’ the life of hanging with friends… also eating some good food.

The only problem is that I didn’t necessarily take a picture of everything I ate on this fine Tuesday. Therefore, I shall display some of my fave eats this week to make up for my busy-ness!

BREAKFAST:


This French toast was OUT OF THIS WORLD. I kid you not. I wanted to finish up the last few slices of my Ezekiel Bread , so I whipped up a quick maple egg white and almond milk wash to soak the bread, fried in coconut oil, and then topped with organic almond butter and fruit. YUM.

This was before track practice on Monday. Don’t you worry, I’m still on the bike, so this didn’t come up later… anyways…

MORNING MUNCH:


So more often than not, I’m hungry at school. So I pack a high protein snack to fill my hunger cues.

Siggis. The saving grace of 3rd period grumbles.

 

LUNCH:

Here’s another eat from Monday (OMG! Two pictures from one day!)  I think we all know the root vegetables are still number one in my heart, so a sweet potato with avocado and turkey wraps satisfied me after practice.

After lunch, it kind of depends on the day what I snack on. Fruit, veggies and hummus, a healthy bar like Kind, Squarebars, Larabars… you name it! Sometimes I go for raw nuts or rice cakes with nut butter.

 

DINNER:

Hands down, best dinner I’ve had in awhile.  I’ve been dying to try Hummusapien’s Vegan Black Bean enchiladas for so long, and so I finally bit the bullet and made the suckers. I topped them with greek yogurt, more salsa, and avocado. You best believe I ate another after this picture.

Holy wow. The taste is INCREDIBLE. And paired with fresh romaine, tomatoes, onion and mushroom? Who could say no?!

 

Sweets and Treats:

After a long week, I decided that I absolutely needed a pint of my favorite ice cream: Halo Top. Delicious, totally nutritious, and hella creamy these pints are full of magical wonders. I am on the hunt for more flavors, so watch on for this more often than not.

 

Obviously these are different days of eating, which I don’t like to do, but hey better than nothing! And honestly, most things are on repeat lately due to lack of time, so more often than not, I’m eating this stuff! Being a busy teenage girl is a full time job, my friends.
